For a winemaker like Elio Grasso, with his own ideas and convictions about tipicity and his own take on what should be involved in the production of a Langarolo DOC, this wine was another test of the limits of his own capabilities. Clearly intent on taking on this challenge with a certain degree of irony, he gave the wine the nickname Educato or 'Well-mannered', and stated that he wanted it to comport itself "as would become one requesting hospitality in another's home". All irony aside, on tasting it you cannot help but admit that it really is a cultured wine, since it reveals itself gradually and graciously to the senses, eventually delivering a subtle and all-encompassing fullness.
