They really are masters of timing, with an unrivalled appeciation of how long grapes should be dried before they reach the stage in which the flavours and aromas are optimised. Torcolato is a great example of this patient approach, as the drying process lasts right through to the depths of winter, with predictably formidable results in the finished wine.
